Seed sprouting

I cut open a pumpkin to save the seeds. This is what I found. It looks like some of the seeds have started to sprout.
This is new to me has any anyone ever seen this before

If you have the space and correct season put them in the hole and have fun.Over wintering is possible.

I see it mostly in beans due to excessive rain, sometimes in squash, rarely in tomatoes.

Hulless pumpkin seeds are famous for doing that sometimes, its very annoying and something that breeders are trying to eliminate
