We're eating real cheap today. Fried bacon flavored Spam with cheese on top, steamed carrots from the garden and a tossed salad with some of the last tomatoes. Homemade pudding popsicles for dessert.
Yesterday was cheesesteaks with lots of fried onions and cheese on homemade sub rolls.
It might be time to do some real cooking tomorrow.

As with any breads made with low gluten or gluten free flour, loaves will be heavy! 100% rye bread is this way, but is delicious, for some things - just slice thin. You could make quick breads, where low gluten helps, or flat breads, one of the things usually made with lentil flours in India, usually in combination with other flours. I often use some ground legumes in bread sticks, using ww flour 2:1. To decrease the ww, and increase the other flour, maybe add some gluten.

I had leftover celery that needed to be used up.
Jack, mozzarella and panela.
Several types of cheese that needed to be use.
A jar of those roasted Piquillo peppers I love so much.
Always have mayonnaise sugar and fresh limes on hand.
Came up with this wild idea of stuffed pimento cheese spread celery sticks.
Then I thought what am I doing I can just mix it all up and make salad instead and by darn that is what I did.
Chopped everything up grated the cheese and added mayonnaise a bit up sugar and fresh squeezed lime juice.
Fantastic idea, it wont be around long.

A few ripe tomatoes helped me to marry two leftovers. Very spicy beef stew with rice, reheated from frozen. And potato salad from yesterday, made from my own new potatoes, almost a same amount of apples, a few late snow peas, and a big bunch of cilantro from my friend's farm. This was a happy marriage, no leftovers of the leftovers.

Baked Asian chicken concoction last night.
It's the best I could come up with in a short time.
One plate costs estimate around 75 cents.
List of ingredients a mile long.
Very hot and flavorful.

Came up with some sort of weird bean/frankfurter dish from stuff around the house.
Sort of like cast iron skillet stove top baked beans.
Ingredients included are.
One can of large Red kidney beans.
One large onion diced.
Two large cloves of garlic crushed.
One teaspoon powdered garlic.
Fresh grated nutmeg about half a seed or a little less.
A dash of freshly crushed all spice.
Cinnamon a dash
Ground clove a dash.
My own fermented ghost pepper sauce about 1/8th cup.
A goodly amount of brown sugar maybe 1/4 cup.
Freshly ground black pepper as much as you want.
One quarter handful of sweet paprika or a little more.
Polar brand soy sauce about two tablespoons.
Water to thin and let simmer down.
I think 4 or 5 cut up frankfurters add then with the cooked onions.
About two tablespoons of flat left over cola.
Cook onions and add frankfurters add the rest of the ingredients spices first.
Ingredients sound crazy but they are fantastic with each other.

Worked late today.
Had a really nice chuck eye steak (((aging in the refrigerator))) that needed to be cooked.
Had a slab of fat from yesterdays brisket that need not be wasted.
Cooked the fat down into cracklings and cooked the steak in the smoked fat.
Put the smoked beef cracklings on top of the steak.
Cooking thrice fried extra crunchy crispy french fries to go with it.
This is why I never ever buy trimmed brisket.
I use the fat for other things and it cost less in the long run at least for me this way.
Don't toss the brisket fat.

Tuna fish salad.
Complete with lettuce carrot sticks grated carrot hot fermented carrot and jalapeño and pickled beet.
Beets I made and the fermented peppers and carrots I made a long time (years) ago and put in the refrigerator after dumping a hot sweet brine on them added to the fermenting juices.
They are still crunchy and good but it is taking a long time to eat 15 liters of them.
The tuna fish salad was made with chunk tuna in oil, bread crumbs because I used all the oil in the can, sweet relish, dill relish, one whole chopped onion, mayonnaise and mustard.
Complete with lettuce carrot sticks grated carrot hot fermented carrot and jalapeño and pickled beet.

Took the rest of my reverse smoked brisket point and diced it up.
Put some oil in the bottom of a kettle and added flour and black pepper.
Made a roux.
Put in the meat diced russet potato with skins and chopped onion.
Let slowly brown for a bit.
Added water and made a gravy and had a nice bowl of it.
This morning I heated it up added more water with paprika chili powder cumin my homemade hot curry powder ground coriander and a dash of soy sauce to make chili gravy.
Once all the spices and such have simmered a bit I then put in a healthy dollop of Alfredo sauce to richen it up a bit.
This will go on pasta like a form of multi cultural ragu.
What ever it is, it is delicious and the best part is nothing overpowers the other but you can tell a difference in flavor as you add the spices.
