Hot Wing Experiment.
Hot Wing Experiment is on the way.
I mixed with a whisk.
1 cup flour.
1 cup corn starch.
1/4 cup granulated garlic powder.
1 teaspoon table salt.
Will soak wings in a thin egg wash then flip them in the four mix and fry.
My next step will be to come up with a combination butter/fermented lime ghost pepper sauce to slather them in.
No for sure how I am going to do this but will update when I do.

Next I am making the sauce.
1 cup of fermented sugar lime juice ghost pepper sauce in separate measuring cup.
1/4 cup sriracha sauce.
1/4 cup granulated garlic powder.
In this 1/4 cup of garlic powder I added enough sweet paprika to make it 1/3 cup.
1 pound of salted butter melting slowly on the stove in a small stainless kettle.
Yes I said one pound.
Let butter melt till the solids start to bubble dump in the powders and stir.
dump in the hot sauce and stir.
At this point you my think it is a disaster because the acid will cause the milk to turn into what is farmers cheese due to the heat.
And the garlic powder isn't mixing with the oil.
No worries, I used my trusty stick blinder and the result is a very creamy orange colored sauce.
The pepper heat is very reasonable too and it has that lime tang I love so much.

Got the chicken wings cut up and soaking in a mixture of eggs water a dash of good polar soy sauce and a dash of heavy cream.
I like to leave the wing tips on as a handle.

Just tested one they are the best I have ever had in my life.
Why wouldn't they be, everything I put into them was to my taste.
After taken out of the hot fat I flipped them in the sauce in a large stainless bowl with the sauce.
Finger licking good.
