So.
Sauerkraut is still alive until it gets canned/cooked. Kept in fridge it lasts a long time and you still get the good pro-biotics, etc.
Question: If the mason jar is vacuum sealed with a jar sealer. The air is mostly removed. Do the microbes die and the sauerkraut becomes less healthful?

Mines been in the refrigerator for probably 2 years or more definitely the red stuff.

It's delicious too.
I think I'll have sauerkraut and weiners for supper.
