Eggplant "Bacon"

Well, Pickles found a recipe on Pinterest for dehydrated eggplant "bacon" It's cut into 1/4" slices and the smoked paprika, onion powder and garlic powder rub made the final product kinda looked like bacon but that's about it. I made three trays of it with two excess eggplants I had hanging around.
I also made three trays of just plain eggplant slices. Here are the "bacon results:

It wasn't very good and was a bit bitter. To the compost pile! At least the eggplant was free so no loss there. Today I will play with rehydrating the plain slices and see what the texture is like.

There's no replacement for pork bacon. :)

The article recommended 140-145. Seems a bit high to me but I went along with the recommended.

Maybe the seasoned slices could be cooked briefly, like in a microwave, then laid in the dehydrator.
