While ham hocks are ridiculous, have you priced oxtails, lately? Ox tails are over the top everywhere.
I see old folks just looking at the price of something they used to be able to afford because they are poor with almost tears in their eyes.

The past two winters, here, have been very mild. So, I just didn't get around to making a lot of soup. This upcoming winter, I think I'll finally get around to making oxtail soup. It's been in the planning stages for more than 5 years. My mom made an amazing oxtail soup, but had no recipe that I could find.
I think that I finally found the key ingredient, star anise (if one knows how I like black licorice).
I'll cobble together something from a search of several recipes.
The known ingredients will be...
oxtails (5 pounds likely cost mom $4.95 or less, I'll be spending about $60, unless I find them on sale)
beef broth
onions
carrots
celery
tomato paste (if not something from the garden)
garlic
thyme
anise
bay leaf
salt & pepper (no salt, if I can't find sodium free broth)
And, maybe a bit of sweet potato, either in small chunks or blended in as a thickener. I'll just have to remember to refrigerate the soup overnight, and skim off the fat, before blending in the sweet potato.
Just thinking about it is making me hungry, but I have a 6 month, or more, wait.

6.75 a pound here for oxtails.
They have designer oxtails for a ton of money on line.

They're various beef ranchers that butcher their own beef and sell it on line many times at a premium price.
They even have waygyu oxtails.
HEB doesn't even carry select Dino ribs anymore they are USDA prime or choice.
Pound for pound you get a better deal with beef cheeks.

Never bought turkey thighs before but out of curiosity I looked last time I was at our main store and they had them.

I saw that the other day while cruising the meat counter and I was astounded! Absolutely ridiculous money for bone, fat and a little bit of meat. I love liver. My mom made it just right and usually with bacon and sauteed onions; mashed potatoes on the side. Oh yeah!

$8.99/lb, here, in just one store. Other stores are much higher. Vac-packed with an expiration date of May 3rd. They have lots of them, but I also noticed several different oxtail seasonings that are new. I'll likely visit the store on the 3rd.
