Gave two slabs one of each to one of my co-workers.

This year we colored some of our grawlax with grated beet. This was made from rainbow trout. Blueberries could also be used to color the fish and I thought the it would be neat to have beet on one side and blueberries on the other to have real rainbow effect. For that reason the filet should be skinned before curing, which we do not usually do.

Last night I had a bit of peat smoked Scottish Atlantic salmon. Very nice but IDK how different from the usual on this side of the pond. I would have to taste them side by side I guess to tell the difference. Smoked fish is always a treat!
