Surplus Soup.

No not army surplus but surplus vegetables.
Thought I would toss this one in there for people that have too many squash and the likes.
What we have here is chopped yellow and zucchini squash.
Hatch chilies.
Poblano chilies.
Celery.
Onion.
Fresh garlic.
Cumin.
Paprika.
Knorr tomato bullion.
Knorr chicken bullion.
Nutmeg.
Black pepper.
About 3 cups water or more.
28 ounce can of tomato puree.
Sweating in oil and flour first then the other stuff.

It was missing something so I added.
1 teaspoon of each.
Thyme.
Ground cinnamon.
Allspice.
Needed a little sweet so I added 1/2 cup of port wine.
That seemed to do it.
I also added some finely chopped cilantro about a cup.
In all honesty this may turn into something else like a chunky sauce or something.
But right now it's a soup.

Cooking tip!
If you keep the temperature of the concoction below 200F something around 195F or so you can reduce the liquid without overcooking the delicate vegetables.

Somewhere in the process I added about 2 cups of chopped okra that I needed to do something with.
If you actually bring to a boil not only will it stick it will over cook to mush.
Something I was raised on but don't actually care for.

Once you get the system going right you can sit back and relax only getting up ever so often to give it a stir.

Right now it has the lid on it.
If you want pasta in it cook it separately.
I'm going to, or at least planning to, have chicken thighs cooked separately.

Just thought I would toss that out there for folks that didn't know such things.

Chicken fried chicken to go with the soup.
Simple but effective.
Boneless skinless chicken thighs pounded out and chicken fried.
Flour with garlic and salt and a dab of corn starch About 3 to 1 Flour to corn starch.
Egg wash is simple egg and water whipped with fingers.
Flour first egg wash second flour third and fry.

I remember when I was a wee child before I even knew there was such a thing as school my mom would make something similar she called gumbo.
Sans squash.
It had okra tomatoes onions celery and bell pepper.
It always had shrimp.
It was one of my favorites and I remember it well to this day.
This is a very close match.
I had about a pound of shrimp leftover and I needed to use it so I put it in on the low heat with the rest but not boiling.
Stepped out in the yard and picked some fresh bay leaves.
Put them in and covered.

I didn't get anything out of that one I was too young.
Anna and the king is much better.
Took me forever to watch it because I was constantly getting uo to check on the soup and frying the chicken thighs.
What was a rather long movie to begin with took about 4 hours to watch.
Oddly enough I didn't see one siamese cat in the whole movie. :lol:

Surplus soup has a different meaning, here. I use a 16 quart stock pot, filled to about 1/2" of the brim. ;)
