Homemade Pancetta.
Got a small slab going.
Gonna let this cure for a few days and get rid of some moisture then roll it up to finish drying some more.
Using insta cure #2 salt black pepper and sugar.

Well how on earth am I supposed to tell how it is drying????
I normally do this in the garage hanging up in the winter here in Texas.
But like a fool idiot I thought I would give it a try in the heat of the summer.
So far no problems in the refrigerator but I have to keep my eye on it every day.
I fully intend to eat this stuff raw not cooked, been doing it for years with no ill effect.
