In the old days and sometimes nowadays by good people the onion skins would be used to make a dye for cloth and you don't need a mordant.
When I used to peel onions on an industrial scale we didn't have time for such conservative actions and a lot of onion went to waste.

There's not enough left of the root to do anything with after I get through with it.pepperhead212 wrote: ↑Sat Aug 12, 2023 11:36 pmYou can also cut the root section out of the onions, taking it about an inch deep, and plant it as an "onion set". I also do that with shallots and scallions.
I leave the root attached until the very end to hold the halved onion together while cutting and dicing.

Good idea, pepperhead, getting more value out of things makes a difference.

Re: Culinary Conversations
I love dates they are my favorite dried fruit and have been all my life.
At 4 dollars and something a pound I personally feel it's a real deal for me.
If I get a sweet tooth I reach for a few dates for dessert.
They are also fantastic with good scrambled eggs with a couple of slices of bacon and maybe some toast.
I normally buy about a pound and a half at a time for sweet tooth snacking.
They last me about 2 weeks.
What's your favorite sweet tooth snack?

Aldi had Medjool dates for a while. I’d get them. Dates are pretty filling and sweet. I get ginger snaps for a sweet treat. I like schaffer’s. Crunchy and with a big ginger bite, with just enough sugar.

My favorite dried fruit is apricots (no sugar added). For me, the perfect blend of chewiness, sourness, with a touch of sweetness.worth1 wrote: ↑Wed Aug 16, 2023 8:17 pm I love dates they are my favorite dried fruit and have been all my life.

I hear lots of good thing about Aldi. There are 126 locations in Texas but not one in San Antonio.karstopography wrote: ↑Wed Aug 16, 2023 8:39 pm Aldi had Medjool dates for a while. I’d get them. Re: Culinary Conversations
No idea what's going on but they're doing something with the space between the HEB store and the HEB gas station.
It was a lot now there's dirt work going on.
Maybe more parking space is my guess.
But heck it would be a quarter mile walk to the store.
Well not that far but really far.
Darn town is bursting at the seams as it is.
Lots more jerk drivers like in Austin.
They're also in the store too.

I bought a pound of Swiss cheese yesterday but for the life of me I don't know what I was going to use it for yesterday or today.
But by darn I'll have it when I remember.
Maybe it was stuffed dates or maybe I was going to dry it.

Wow, that’s a huge expansion. Wonder if the BBQ restaurant will be any good.

HEB expanded our store not all that long after they built it in the first place. Get ready for a big mess and not being able to find anything inside. It was already bad enough with all the order pickers. Only time to go is early in the morning or maybe real late. Forget about Saturday.worth1 wrote: ↑Fri Sep 01, 2023 5:16 am I have no idea how this is going to work.

They just got through expanding it twice now maybe 3 times.karstopography wrote: ↑Fri Sep 01, 2023 7:14 amHEB expanded our store not all that long after they built it in the first place. Then they rearranged everything.
The order pickers are everywhere.
Not for sure what they're up to.
It's an HEB plus as it is.

The HEB true Texas BBQ has been a big hit.
Voted best BBQ chain in Texas by Texas monthly magazine.
All BBQ is expensive now and I'm not likely to ever buy any.
Back in the early 80s some Black folks in town put in a small BBQ stand in Crane Texas.
It was probably the best BBQ I've ever bought in my life.
A pound of sausage a pound of pork ribs and a pound of brisket along with sides was 10 dollars or some such thing.
We used to get it all the time.

Re: Culinary Conversations
My dad said you had to be Black, German or Bohemian to make good barbecue. He used drive all the way from LJ to pick up barbecue from Lewis Barbecue in Velasco. I remember their ribs were extra good.
My friend in Clute would go to Smith’s blue room barbecue. Both Smith’s and Lewis were owned by African Americans.
Barbecue has gotten outrageously expensive. I never eat restaurant barbecue anymore. One friend of mine gets restaurant barbecue anytime and everywhere he travels. He loves barbecue more than anyone I know and has made his own for decades and did some competition cooking.
I make good enough barbecue on my BGE. Better than most I’ve had. The price is right, anyway.

Franklin BBQ used to be The Long Branch.
Old black man from Mississippi I think.
Franklin bought it from him after he retired.
Then there was the old black guy outside Taylor Texas that sold BBQ.
Fitties outside Bastrop is good.
James was raised in east Austin.
About 23 years ago James gave me a sample of his pork ribs and he told me I ate ribs like a black man.
I told him that's because I am a black man.
He almost fell over laughing.
