That is interesting, I have never seen one that stays purple through cooking. Thanks for sharing that!

Carrots will become sweeter when the night time temps drop. Even in the summer we have nights in the upper 40s. We have sweet carrots.

St. Valery is the sweetest carrot I have yet grown. Very nice, sugary aftertaste. Great flavor.
