Foraged up a pile of chanterelles and a few oyster mushrooms. Cooked those down in a little butter and garlic, then added the cooked mushrooms onto some thin sliced roast beef on a roll with some dijon mustard spread around. Provolone cheese on top and into the oven. Yummy.

I broke down and bought some bacon ends and pieces.
Only because I actually found some fettuccine pasta.
It's been either sucked up or just out for literally weeks.
Also picked up some more cheap medium shrimp.
Will have you know what, with the other tender portion of the chuck eye I had stashed away.
Steak con fettuccine con bacon y shrimp.


This morning I had a bowl of beans and a wedge of cornbread with butter on it for breakfast.

Good cornbread is always a good way to start or end or whenever in a day.. or night. Real butter, real cornbread, mmmmmm.

Akgardener, that sandwich looks just yum, and the chunky potato salad looks excellent.

No I didn't stuff the chicken breast.
I just tied it up to keep the skin from shrinking up around the sides and to make it more rounded.

Got home last night and thawed out some gumbo.
Additional bacon and corn put in it.
Cooked some noodles and shell macaroni.
Put the gumbo concoction on top and ate.
The night before that I had baked bacon with eggs chopped fresh jalapeños and shrimp.

Two 15 ounce cans of mixed vegetables.
Approximately two pounds ground chuck.
Tons of black pepper.
Knorr beef bullion powder.
Ketchup.
Mexican oregano.
Onion powder.
Cracker meal.
Panko.
Shot of Worcestershire sauce.
Two eggs.
Ketchup and more black pepper on top.
All in a Lodge cast iron loaf pan.
Baking at 300F.

I can only look briefly, or I'll start drooling on the keyboard.

McDonalds once had a mushroom Swiss Angus burger, the only item on their entire menu that I liked. I heard that it's now discontinued, and I haven't gone back since then.

Meatloaf and mashed potatoes have been chewing at me since about noon in August. I figure cooking a meatloaf will be my first time using the oven in a couple of months. In a couple of weeks the weather should be much cooler for such cooking. I usually make three, and freeze two of them. My problem is that I only have two double loaf pans, so I have to do two batches in the oven.

I think that my area has about 30% of the population with some Italian in their line. While pasta has been a bit low in the stores at times, it has never come close to running out. Egg noodles have run out a few times. There has always been spaghetti #8, while some of the other shapes may be out of stock at times. Fettuccini #134 is my fave, and is sometimes OOS, so I always have a good supply in the pantry. Prices keep rising, so several months back I bought 25 lbs of angel hair at .50 cents a pound. It was some fancy label type that was being closed out, having an original price of 1.99 pound. It wasn't selling, back then, at that price.

That was a great buy, but holy toledo, 25 lbs, lol. Still, it will fill you up and for little money for quite some time. :)
