Deli sliced bbq chicken breast sandwich for lunch. Grilled Salmon, rice pilaf and peas for dinner. I do LOVE me some grilled Salmon.

Neighbor had a 3 meals for 2 people Hello Fresh box delivered. They were out of town and texted my wife to, if we could, go get the box off the front step and just eat the food, they wouldn’t be back in time to use it. Wife was out, so I went over and got the box. This has happened before, neighbors were out of town and the last time the food spoiled in the heat before we could get to it.
There’s three dinners in the box for two people, with instructions and all the ingredients for preparing each meal. This box had a cheddar meatloaf, something in the oven or skillet for chicken cutlets, and something in skillet for pork loin chops, I didn’t really pay enough attention to the instructions to notice exactly what the recipes were.
I repurposed the chicken and pork and some of the vegetables and went off scrip. Marinated both the split chicken breast and pork loin chops in fresh ginger, rice vinegar, soy sauce, sesame oil, green onions, (came with the hello fresh kit), jalapeño, fresh garlic and honey (also in the kit). The kit had a pack of broccoli florets and smallish whole Brussels sprouts and both of those got cut and tossed with a little EVOO and roasted in a hot oven. The chicken and pork were grilled.
Felt like I was on an episode of “Chopped”. Anyway, it was good. Still have 10 ounces of 85/15 ground beef from the box (the meat comes in 5 ounces x 2 increments or 10 ounces total). Still have probably 2 pounds of yukon gold potatoes that were in the box, 3 big carrots, some sour cream packs, Frank’s red hot seasoning, a small packet of shredded cheddar, a couple packs of panko. It will all get used or eaten.
Why didn’t I just follow the instructions, well, each meal was for two people and I was feeding three. Plus, grilling outside is a whole lot easier to clean up afterwards than trying to do two separate messy skillet dinners. The size of these meal portions are verging on diet food. No way could I stretch the dinner for two into enough food for three active adults that habitually skip breakfast. The neighbors are very skinny, I now understand why.

Funny, I often but not always get 3 meals out of a recipe and I am not at all skinny, lol. Glad you put the food to good use. I usually only get a box when there is some new type of recipe I have not tried before with unfamiliar spices, etc. That is how I first tried Thai Chilis, Shawarma spice and others. Since I live alone, 6 dinners is almost a weeks worth of food.

The meals with Hello Fresh are probably more filling than I realize since we didn’t yet use the potatoes, cheese, sour cream or panko in the box. I noticed one card said 770 something calories or thereabouts and I believe that must be for one complete meal as prepared per the instructions. That’s fine and likely plenty enough calories for that three meals a day routine many follow. All we typically consume up until lunchtime is coffee, cappuccino for me, and we aren’t snacking all day so our dinners will be bigger than average since the calories have to come at some point. Anyway, everything in the box seemed fresh and of good quality.

My local old school butchers are gone here.Hard to find Black Angus,mainly the 2 inch tenderloins are hard to get.

Celebrating the wonderful rain storm are having I decided to make artisan chicken noodle soup.
Ingredients are.....
Chicken breast.
1/2 roma tomato.
Garden fresh basil.
Mexican oregano.
Ground fennel seeds.
The above two in the molcajete.
Turmeric.
Nutmeg.
Knorr chicken bullion powder.
Butter.
Corn starch.
Wide noodles.
The bullion powder Nutmeg Butter fennel turmeric and oregano were simmered in water for some time.
Then the noodles put in to cook.
Once this was done the remaining ingredients were put in the soup but the burner was turned off so the tomatoes wouldn't cook.
The corn starch was added to thicken a little.
This is a really good chicken noodle soup.
The chicken isn't over boiled either since it was put in last.

Grilled steak picanha Brazilian style (salt only) as the main event and sliced a very ripe Gregori’s Altai as a side, along with chips and the fire roasted salsa.
Pretty perfect summer dinner.

The meal might seem odd with a pizza, however pizza is easy to do and fifteen year olds seem to devour pizza, and although they like duck pancakes it does mean that there is more to go around. Also, whippets are partial to pizza, must be the Italian greyhound in them, and the thought of a few scraps of duck and pizza crusts means they behave nicely and quietly without interruption whilst we are eating.
I don't want to think what rebellion we have on our hands of i get the portion sizes wrong!

Shrimp and zucchini spaghetti with a kick. The kick was Thai Chilis. The basil garlic butter didn't hurt either. Made a double batch.

On I do crave some shellfish. Unfortunately, the rest of the family has an allergy to white fish and shellfish, ie. the non oily kind. We have to cross the road as we pass the chip shop for fear of enducing boils and skin reactions. A shrimp disguised in garlic, butter and chilli won't cut it.....
Although, if we can arrange a secret rendezvous and there is sufficient time for the fish oil to dissipate I might have a chance !
