Tangy Reuben Bake
Yield: 4 servings

3 medium potatoes, peeled, sliced and cooked
8 oz fully cooked kielbasa or Polish sausage, thinly sliced
1 can 8 oz sauerkraut, rinsed and drained
½ cup Thousand Island dressing (see note below)
2 TBS sugar
2 TBS fresh parsley
1 TBS dried minced onion (can use onion powder or even minced fresh onion)
½ tsp caraway seeds
¾ cup shredded Swiss cheese

In a bowl, combine the first 8 ingredients.
Transfer to a greased 8” square baking dish.
Bake uncovered at 350 for 25 minutes. Sprinkle with cheese and bake 5 minutes more until cheese is melted.

GoDawg's Notes:

We used a pint jar of homemade kraut and it worked fine. Pickles says she’s used canned potatoes before and they worked too.

If you don’t have caroway seeds, leave out. I just happened to have some from making rye bread.

If you don’t have Thousand Island dressing on hand, mix together:

5 TBS mayo
1 TBS ketchup
2 TBS sour cream
1 tsp dill pickle relish
½ tsp sugar or Splenda
