Rehydrated milk

So, I've been drinking rehydrated dehydrated milk instead of the regular kind for a while now. I tolerate it better, for reasons that I believe are microbial (not related to lactose or casein).
Anyway, the packaging says to use almost three times as much powdered milk as it tastes like it needs. So I've been experimenting with different potencies for some months.
Anyway, I discovered a cool tip. Apparently, milk needs a bitter component to prevent it from tasting watery. So, if you don't use enough powdered milk, and want an easy fix, just add a little baking soda, and then it tastes great. Don't add a /lot/ of baking soda, though.
