Coleslaw Collaborations.

Start your coleslaw recipes here, 'I'll do mine tonight or tomorrow with measurements, 'I never measure anything. :roll:
But to respect others, I'll measuer and take notes so folks will be able to duplicate what I do, 'If so desired.

Don't ya just love the titles I come up with. 8-)

Pineapple cabbage coleslaw

Pineapple cabbage coleslaw with sweet potato.
As promised just one of the many types of coleslaw I make.
I had to measuer everything out which is against my nature.
1/2 head or about 2 pounds of shredded cabbage I think. :?
1 cup or so of grated sweet potato raw.
1/2 cup mayonnaise.
1/4 cup white granulated sugar.
1 tablespoon lime juice.
1/2 teaspoon salt.
1 teaspoon fresh ground black pepper.
1 20 oz can of pineapple chunks in heavy syrup but drink the juice.
Mix thoroughly and left sit and mix some more.
The sugar and salt will start to draw the fluid from the cabbage and you don't want it runny.
You can adjust this which ever way you want but it is a good start.

I never drain it I just mix it up over and over and eat it from a bowl.

I wonder how it would be if you put the sweet potatoes & cabbage together with the salt, and then drained it after a bit, then substituted (pineapple syrup to taste) for the sugar?

You would have to try it.

I made this one for some of you guys and gals.
I normally put more sugar and mayonnaise in it.
