Tajin Cronicles

.Tajin is a name brand of a powder used on Mexican street corn.
It consists of chile peppers lime salt and citric acid.
The only one I can find in the states is the low hot variety.
It's more sour than anything.
So I decided to experiment.
First off I made a powder with chile de Arbol seeds and all.
Then I took the same amount of Tajin to mix with it.
Mistake number one.
I tasted the Arbol powder.
This proceeded to burn all the hide off my tongue and mouth.
Not leaving well enough alone I did it again.
Okay that's really hot.
Now I mixed in the Tajin for another flavor test.
More hide burned off tongue and mouth.
Sitting down with face in hands for duration of event.
I ended up with 4.7 ounces.
Slight sour taste one heck of a lot more heat.
Letting mouth and tongue recuperate and will continue testing.

I like Tajin seasoning. I only knew about the one kind they sell here. It makes great popcorn seasoning.

I decided to mix an equal parts ratio of 1 ounce Tajin 1 ounce chile de Arbol and 1 ounce Knorr beef bullion.
This came out pretty well.
Then I mixed in a goodly amount with mayonnaise to make a dipping sauce.
This was used to dip the perfect French fries experiment in.
In this one I fried until they were between a French fry and the shoe string potato but larger but not dark brown.

I must say this is a real winner in my book.
