‘Chinese Buffet’ Green Beans

Sister Pickles found and first used this recipe recently using the yard long beans which cook a lot faster than regular green beans but if slightly blanched, regular green beans will work fine. It's also been discovered that this recipe is great using not just green beans but also as an all around veggie medley, adding summer squash, onions, mushrooms, green pepper, eggplant or even chunked up green tomatoes! I was surprised how good the green tomatoes were. A quick and easy recipe.

‘Chinese Buffet’ Green Beans

1 TBS peanut oil
2 cloves garlic, thinly sliced
1 lb fresh green beans, trimmed (yard long)
1 TBS white sugar
2 TBS oyster sauce
2 tsp soy sauce

Heat peanut oil in a wok or large skillet over medium-high heat.

Stir in the garlic and cook until the edges begin to brown, about 20 seconds.

Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes.

Stir in the sugar, oyster sauce and soy sauce.

Continue cooking and stirring for several minutes until the beans have attained the desired degree of doneness.

Looks good. Growing yard long beans, the Thai Red Noodle type, for the first time. Hopefully, I’ll get to try out this recipe on them.

For several years I grew 'Red Noodle' with varying results. This year I'm growing just the plain green yard long and they're doing much better. A few beans are a meal!

And to think they are a type of cowpea not a bean. :)
With that said they go very well with blackeyed peas too.

That’s right, the Asparagus beans and cowpeas are all closely related as I understand it, the traditional green bean is different animal or vegetable altogether. I’m growing purple hull pink eye peas, another cowpea. What are there, crowder, and a host other sub varieties, cultivars, etc.

It’s generally too hot to grow a regular green bean here by July, My French filet beans gave up in June. The cowpeas have a reputation for thriving in the heat coastal Texas can dish out in July and August. Maybe Red Noodle will thrive too. Purple hull pink eye can be harvested young and eaten like a green bean. I like them just are they are maturing and shelled, but not yet dry and mature.

I’ve read the Red Noodle isnt as productive as the green asparagus beans. I’m still up for testing out different varieties. Might be a dud, maybe I’ll get just enough for a dinner or two. That would be okay, too. If the squirrels leave them be, I’d be happy.

I planted the green ones and the darn things grew on their own up until cold weather.
Not much bothered them either.
