@Bower
It's a variation of what I saw on YouTube.
Her recipe called for 1.5 teaspoons of yeast for 1 and 2/3rd cup of flour.
200 ml of water.
And so on.
I actually used 3 teaspoons of yeast for 2 cups of flour more or less and a little more water to make it look right.
I buy it by the jar and keep it in the freezer.

Here's her actual recipe and video.

Sauce fit for a king.
I took the gravy and added water, if not mentioned sour cream.
Added...
Hot smoked Spanish paprika.
Chipotle powder.
Ancho powder.
Achiote.
Sriracha sauce.
Garlic powder.
Heated up and used the stick blender.

I turned down my invitation, I'd rather be out in the rain gardening.

I finished off the last two schnitzels for lunch and making toasted rice with only salt and cumin in the water.
Long grain this time.
Got the beans ready and will have a home ground fried brisket patty for the meat.
Totally out of fresh peppers and not happy about it.

Steak Picahna. Emerite and trionfo violetto Green beans cooked in bacon grease and sliced fresh onion. The green beans were super delicious. Grilled onions, cubanelle, corbaci, and jimmy nardello peppers. Yummy Cucumbers dressed in Mexican crema (very similar to crème fraiche).

After watching enchiladas videos yesterday it was killing me.
So I got up today and made nice thick yellow corn tortillas just the way I like them.
I don't recall ever making enchiladas from homemade fresh tortillas before.
Some came out goofy but they'll work.
Now I need to dig out a bag of frozen chili from the freezer.

I was looking for a particular flavor so I made a small batch of chili with ground lamb and ground brisket.
About a 10 ounces total meat.
Tortillas rolled up with Jack cheese and chopped onion.
Used some of the chili sauce to cover pan before making.
Letting the rest thicken for the top and more cheese and chopped onion.

Everything ready to go in oven when I'm ready.
Cheese combo is cheddar and jack.
The same type pan is on top and tied up.

Enchiladas ready and who could do without pickled jalapenos from Mexico in the background.
I put them in a quart jar after opening the can.
If the liquid doesn't cover I just add a little white vinegar.

Four pound Elk roast in the Crock pot, from the cow elk my daughter harvested last fall.
Crushed some Lorz italian garlic cloves and sliced two small yellow 1015 onions and one small yellow granex adding all that into the braising liquid of soy sauce, Worcestershire sauce, cream of mushroom soup, and water. Already smells great.

Sides will be emerite green beans cooked with some more of those onions and bacon grease, then some garden cucumbers dressed in sour cream, dill and a little vinegar. The low carb daughter will be coming over for dinner. I’d also like some mashed potatoes with this meal, but I’ll try it without the starch.

I have a small loaf of whole wheat bread trying to rise in the oven.
Had to mix and knead by hand because 1 cup of flour isn't enough to do in the stand mixer.
I used one cup of flour.
1 teaspoon of yeast.
A pinch of sugar and salt.
A dollop of molasses.
Water as needed.

While waiting for the bread to rise I decided to go back to a project I started literally years ago.
Not for sure how long ago it was.
Possibly 4 years or more.
I put some apple cider vinegar with mother in a gallon jug of red wine and just forgot about it.
Yes I knew it was there but didn't mess with it until today.
It just set there and gathered dust.
Here it is and by hoot it's red wine vinegar.
Put it in 4 smaller bottles and in time I'm going to reduce it down to 1 bottle maybe.
We'll see how that turns out if I do it.
