I like the option to have polls. They can be useful sometimes (although in my experience, they're rarely used; so, I don't think they'll cause much clutter).
I like it when the creator of the poll can choose whether members can see the votes or not, but when they're hidden, I prefer they only be hidden until you've voted.
It's also nice if you can make it so people can/can't change their votes.
Even better than polls would be the ability to do quizzes, but I don't think that's going to be built-in to the forum software!

Did you check the poll section out yet? It's at the bottom when you make a new topic. It has many options including to only let people vote that replied to the thread.

I think the aggregate vote should be viewable (your bar graphs) but not who voted for what.
