Homemade Hominy Act II.
I had to go to Home Depot to get some tool stuff and decided to buy a 50 pound sack of Type S hydrated lime.
Cost was 10 dollars and some change.
Type S is a Dolomitic Hydrated Lime that contains a greater amount of magnesium oxide the same stuff that is in the dietary supplement section of your store at around 60% per pill.
This is a very clean pure white lime.
No it isn't food grade, no I dont care, so please no flaming.
I used 1 1/2 cups of lime to 3 gallons of hot water let simmer for about 15 minutes or so and am letting it settle for at least 2 hours in a covered kettle.
Total experimenter possibly total fail
We shale see, stay tuned.

The hominy or whatever you want to call it is coming out absolutely phenomenal.
The skin from the corn is dissolving big time.
You will see some videos on YouTube where it says to use baking soda.
Don't do this, the taste of baking soda impregnates the corn and you cant get it out.
The type S hydrated lime leaves nothing behind but a buttery smell and flavor.

Close to four cups maybe I didn't measure.
The corn is the giant white corn from what I can tell.
It may even be a mix of white corn.

Now I have the purple corn cooking in a bath of the remaining lime water.
Not to used lime water but fresh lime water.
The left over lime is in the bottom of the big kettle.
There is no need to mix that stuff in with the corn.
The white has been cleaned and rinsed several times and ready to freeze or dry.

People have been making hominy for a long time. I'd reckon your lime is as good or better than what has been used in the past.
Looks delicious. I love hominy. I make it with bacon, a little bacon grease, and grated Parmesan cheese.

I have no idea what to do with it because purple looks unappetizing to me.
