Made some ribs in the oven. Sweet potato fries and some sauteed squash, zucchini, red onion for sides.

I have chicken wings soaking in buttermilk but without anything else in it because I'll be using the buttermilk to make gravy for chicken thighs and mashed potatoes later on.
Now don't freak out because the buttermilk will be brought up to a temperature well beyond the required temperature to kill any harmful bacteria like salmonella or E coli.
Why would I throw it out.
The only hot sauce I have for hot wings is my homemade hot sauce.
The homemade ranch dressing is made and I have carrots and cabbage for a slaw and carrot drunken raisin salad.

I found my homemade fermented ghost pepper sauce and used it on the winglets.
The flour was seasoned with.....
The Hot red chili powder from India that I think is ghost pepper powder.
It's really hot a lot hotter than cayenne pepper.
Mexican oregano.
Garlic powder.
Black pepper.
Knorr chicken bullion powder.
Corn starch.
Put just a couple of teaspoons of ghost pepper sauce on each piece.
Not enough to freak out about.

Yesterday all I could think about was fried hot chicken wings.
After 13 wings and the carrots I couldn't eat another wing for a good long time.

my wife made a big a$$ salad. thats almost a daily deal.
i made the golden split pea soup out of moosewood low fat cook book.
baked the last 3 thelma sanders sweet potato squash.
boiled a pot of mixed potatoes, ama rosa, fingerlings, pinto, and norlund.
note to plant more pinto potatoes this year. i like em.

Raisins that have been soaking in dark rum for months.

So it's fried chicken thighs with spicy crust.
Mashed red skin on potatoes.
Stewed okra.
Cat head buttermilk cat head biscuits.
Chicken buttermilk gravy.
This is something like you might get at the now closed Threadgills restaurant in Austin Texas.
A place my wife and I used to eat at about once a week.
The end of an era for many years and a sad closing.

I made a delicious dish for dinner, something that was based on a recipe I saw in seriouseats - https://www.seriouseats.com/chickpea-stew-bacon-recipe

I made it almost the same as the recipe, except I used a couple of my greens from the hydroponics, instead of the broccoli rabe. And I cooked 3/4 lb of the chickpeas, which made almost exactly 5 c cooked. I added about 1/2 tsp each of turmeric and asafoetida (an easy way to add a slight onion flavor, once cooked), so this ended up in the 2 c of chickpea water, added to the dish. I didn't add any more water, even though the chickpeas and greens were about an inch about the surface, as the greens (I used boc choy and mizuna) gave off enough water to cover everything (I covered the IP while simmering, to help steam the greans). And I didn't have any of that optional Italian chili paste, so I added a tb of sambal oelek, when adding the rosemary to the dish. Minor tweaks, and the dish turned out great.

Fried chicken wings last night, no vegetables. I sprinkled some crystal hot sauce on my wings. We had a late breakfast of scrambled eggs, pan sausage and biscuits.

Tonight, braised beef short ribs. Aldi had some beautiful choice beef short ribs, I could not resist them.

Plan is to follow this recipe. Might forego the fresh herb component for dried. Mashed potatoes as a side.

HEB used to sell USDA select Dino ribs.
Not anymore.
Now it's USDA prime.
I'm not paying 75 to 80 dollars for a rack of bones and meat.
Back when they did sell select Dino ribs I would have them cut them down the middle to make short ribs.
Cost was a little over 20 dollars or so.
