Black Forest Cake

Getting ready to make the Black Forest Cake.
Got to collect all the stuff to make it first.
Today I got 3, 8 inch cake pans and I have some at home too.
Need to get the Kirschwasser at some point.
It's a very involved cake and I don't want to mess it up.
Stay tuned for updates.
No idea who'll help me eat it. :lol:

I managed to pry myself up and go to the store around 7:30 PM tonight and get the Black Forest supplies.
I had to go to two liquor stores to get the Kirschwasser.
Both said "say what" when they asked what I was looking for. :lol:
And yes I pronounced it correctly which made it even worse.

The black forest cake has gone so far off the rails I can't really call it a traditional black forest cake.
But it will still be good.
Reason is I'm not going on a search at the store again for tart cherries.
And it's not a sponge cake.
Plus many other things.

I made enough batter to make three cakes in three 8 inch cake pans.
I simply fractioned out the measurements from two cakes to three.
If it called for a cup of something I made it a cup and a half half of 3/4 is 3/8 and so on.
Im thankful I have the ability to do simple fractions in my head.
All three are in the oven at 350 as we speak.
It the same recipe on the Hershey cocoa powder container.
I used the KitchenAid mixer this time.
Darn it I really don't want to get those canned cherries in water at the store.
Kicking myself for forgetting them last night.

The cakes are almost ready.
I'm have to cut the tops off after they cool completely off.
I hope these new cake pans don't stick.
I also found a brand new in the package KitchenAid piping bag and nozzles she never used.
They don't even make them anymore.

The layers came out with ease and the tops are cut off.
I let cool some more and there is a half cup of straight 90 proof Kirschwasser spread out among all three of them.
They'll cool some more and I'll make the whipped cream frosting for the cake.
It'll have Kirschwasser in it too.
Kirschwasser isn't the sweet cherry brandy people buy and get sicker than a dog from.
It's alcohol made from a particular type of cherry that is distilled to 90 proof.
It's as clear as water but has a wonderful cherry background taste to it.
I used to keep it around at all times for an after dinner shots.
The cake itself is just as good as sponge cake.
Light and moist.

Did you eat the tops after cutting them off? Sometimes they tell you to flip the cake bottom up, that way the top squishes down after a bit and you have the flat top of the bottom to put the next layer on. I guess it depends on how many total layers you need to have. Looks delish!

There is a Kirsch Liquors about 40 miles east of me. I wonder if they sell Kirschwasser?

Reviews of Kirschwasser are all over the board, even for a single specific brand. Many say it has a cherry fragrance (does it lose that in cooking?), and a bitter almond taste. All say that it is nothing like sweet cherry brandy.

Here it is I'm not going to eat the tops.
The frosting is homemade whipped cream with Kirsch vanilla and powdered sugar.
It's three layers and I'm sick of messing with it today.
The first and second layer have the cherry and thickened syrup on the middle.
Nothing to brag about in looks.
Off to the refrigerator.

I didn't cook mine and I have no idea if it loses the fragrance after cooking.
Works as a preservative.
So the cake has a half cup of alcohol in it.
This is seriously stupid I have no idea how long it'll take to eat.
But it was on my bucket list to make a Black Forest Cake.
This is close.
Not that I plan on kicking the bucket anytime soon.

That looks quite good. I have tart cherries in my freezer from our tree. (I hate almond extract) does it taste like almond extract?
