I smoked some poor man's burnt ends a few days ago for the first time. Just a chuck roast with a few pieces of hickory instead of an entire brisket. Not quite the same but pretty damn good.

I had another grilled cheese sandwich with lots of chopped onions in it with chopped soppressata too.
It was practically fried in butter both sides for a crispy crunch.

I proclaimed that I could make homemade onion rings some time back.
Here they are.
Just as good as anyones and better than many.
Dust with flour.
Dip in batter that is flour water baking powder dill pickle juice salt Cholula hot sauce hot smoked Spanish paprika.
Coat with bread crumbs.
Fry up and crispy too.

Make whatever is easiest. Just got home from Boston yesterday from more surgery to remove a rib. So not much cooking in My immediate future. But everything everyone else is making looks delicious! Off for a nap lol.

I so sorry to hear this Sue. That's got to hurt quite a bit and I bet that you hate coughing and sneezing. I sure hope that you start feeling better soon. Do you have anyone to help you with whatever you need? Please take care.

8 ounces of ground brisket.
Corn.
Small portion of the onion gravy from last night.
Whole leftover boiled potato in the jacket.
Mexican oregano.
Sweet paprika.
New Mexico chili powder.
San Antonio chili powder.
HEB brand chili powder.
Pickled jalapeno.
Star anise.
Ground allspice.
Ground clove.
Nutmeg.
Chili arbol salsa.
Dark Cocoa powder.
Water.
Leftover chicken thigh skin removed and chopped up.
Thigh bone.
Cumin.
Cinnamon leftover from a soak cinnamon in bourbon experiment.
Bourbon soaked raisins.
Chrystal hot sauce.
Very tasty indeed.
Black pepper.
Garlic powder.
Simmering forever to totally rehydrate the dried ingredients.

I tried my hand at homemade beef breakfast sausage.
Only one pound.
I used about 8 grams of salt which makes it close to 1.5 percent of the weight.
I screwed up and added twice the amount of light brown sugar because I forgot I was cutting the 2 pound recipe in half.
I doubled everything else sage and black pepper and added chipotle powder at twice the recommended amount.

Then used my converted cast iron tortilla press and ring to make small 4.5 ounce patties.

Then I made 5 5.7 ounce regular hamburger patties with a different ring but same thickness.
All pressed inside the ring but lined with cling wrap.
My method doesn't allow freezer burn because there isn't any air space.
There isn't any mess to clean up like the regular hamburger patty molds because people don't use cling wrap.

I also had a hankering for chocolate milk so I made some with powdered milk and dark cocoa powder.

Had ground beef and eggs for breakfast.

Picked these Santa Fe County Piñon nuts. Gloves are a must for the sticky sap.

Roasted at 325° for 15 minutes.

Had 19 ounces of store bought ground beef that needed attention.
So I decided on meatloaf if sorts.
19 ounces of ground beef.
One medium yellow onion chopped.
One giant honey crisp apple peeled and chopped.
About a cup of frozen English peas.
Two heaping tablespoons each of sweet and dill relish.
1 egg.
About a half cup of ketchup.
Salt.
Black pepper.
Nutmeg.
Big amount of homemade bread crumbs close to a cup maybe less.
Mixed it all up formed into free standing wet loaf and put on parchment paper in a skillet.
Oven at 275F.

The only question this Aussie has @Cornelius_Gotchberg is Bisquick or cake flour - is this self raising or plain or does it have some other additives in it
