I've done the batter fried Wisconsin cheese curds many a time. One of my favorites at the fair.

A true Curd Aficionado (yours truly has them ladled out of the vat at Carr Valley [https://carrvalleycheese.com/] whose owner Sid is a pal) would never...EVER...eat 'em fried.

Mozzarella Cheese Sticks fried (https://www.google.com/search?q=Mozzare ... nt=gws-wiz)...sure...Curds...NEVER!!!!

Heck I never even refrigerate 'em; they lose that Squeak!

The batter is so thin, it doesn't even cover all of the cheese. Just enough to keep each curd from fusing with the others, and not making a hot mess of one's fingers.

Even I like jalapenos and chipotle, the seasoned bread cheese sounds like blasphemy.

When we still lived in Wisconsin there was some news about people from University of Wisconsin going to Finland and learning about how to make the bread cheese. I was thrilled to try it, when I found it in the store first time. I do not know if it was from your pal's cheese factory back then, but I was a bit disappointed. The cheese was too salty and baked too much to loose the squeak. It should squeak when bitten and as kids we used to call it the "squeaky cheese".

It should be baked just enough to get some brown spots on the top. Preferred method would be using open flame and the bread cheese resting on a wooden plate at an angle, so that remaining whey will drip down while the flames bake the surface. That is the way my MIL did it. She used to serve the cheese cubes with coffee and you suppose to put the cubes to your hot coffee to get them a bit soft. It can be eaten cold, but I like it pan fried or if I am lazy I heat it in the microwave and eat it with cloudberry jam.
I used to make it myself when we lived in WI, but here it is sold in every grocery store, so just buy it ready made.

Sounds similar to smazeny syr which is a traditional czech dish. Basically a thick slice of Edam or Gouda lighted coated with flour, egg and bred crumbs then fried and served with tartar sauce. Had it a couple times when I was in Praha. Tastes great though after the meal, if you listen closely, you can actually hear your arteries harden.

Speer said he would fill up before the evening meal with Hitler because all that was served was a watery cabbage soup or some such thing.

You may get lucky. My daughter had me take a bite of Portillo's vegan hot dog and I was impressed.

I'm not a weatherman, and I don't play one on TV.

But, there is a slow moving rain storm building up in the ocean, and it looks like it is heading straight towards me. I've got lots of dried pole bean pods that need picking, as a prolonged rain, no matter its intensity, is the worst thing for those pods. Much time was spent yesterday, and will be spent today, not just picking, but figuring out which vines are which, for separating varieties. Most are easy to tell by color, but sometimes white seeded vines cross over to other teepees.

I'll get to the fair, as long as I don't fall off of the ladder.

On one side of the 12 foot+ teepees are sharp, loose bricks that retain the leveled soil. If I miss those, one foot further away is the paved road. If I put the ladder on the other side of the teepees, I can now fall into the high bush blueberries. I won't be able to extract myself quickly from there, so the vibration of me hitting the ground will likely send 100 yellow jackets (their nest under one blueberry bush) out to greet me.

With that vegan corn dog singing its siren song to me, maybe I'll skip the ladder and just pick the pods that I can reach. For varieties that I do not gather much seed, perhaps Ill just attempt to yank down those vines.

Drive by a Portillos often but will not eat there. Decades ago they had great dogs. Then they transitioned to Italian and polish. Then added beef and chicken and fish. If there are corn dogs on the menu, that's just wrong.

I'll have you know that I push all four legs of my ladder about 2-3 inches into the ground, and I only stand at the top rung, never on the top platform. And, it's only an 8 footer (I think, as it's hard to measure during a freefall).

The most dangerous part is setting up the teepees, especially in the wind. Four poles, two hands, with each pole having a mind of its own, until I tie them all together near the top.

The vegan corn dog looks like a go on Saturday. If I do not post here for awhile after that, it didn't go well.
