That pork chop looks delicious.
The me a pork chop needs to be well marbled with the fat on the outside fried til crispy.
I was reading The Stand by Stephen King and Mother Abagail had butchered a hog for the folks showing up and the story was describing the crispy fat on the pork chops.
I got so hungry I had to fry up some nice fatty pork steaks.
That pork chop looks delicious.

The fat cap on porkchops is one of the most important things for me. After it renders down and browns a little it will just melt away when you eat it.

Greenbush Italian had a mild, real Tomatoey flavor, as did the Black Brandywine. The always delicious Daniel Burson had a more pronounced/little bit stronger taste which I couldn't quite put my finger on...so I deferred to the taste buds, which were reportedly ecstatic!The Gotch

Kinda like asking a parent which one of their five children they love most, am I right? Anywho, all but the VA Sweets were a skosh over ripe, (a très thick-cut Radiator Charlie Mortgage Lifter soaked this afternoon's samitch).
Today...I'd give Daniel Burson the nod. I asked the lovely and long suffering Mrs. Gotch if her fave was still Ananas Noire, to which she replied a noticeably hesitant "yes;" this I took to mean that a few other varieties are creeping up the chart.
Ask 10 people what's their perfect BLT Tomato, you's probably get 10 different answers. Guru Craig LeHoullier says it's a Dead Heat between Brandywine and Cherokee Purple( https://www.wral.com/story/expert-helps ... /17756112/
Because everything's been so late this year, we haven't even tried the Pink Gift or Old German, or 1st timers Hillbilly, Orange Accordion, KY Beefsteak, or a few others, including the Competition Behemoths; our work's cut out for us, but glass half full?
We have something to look forward to!

Thanks for the pictures of the bacon making, it brought back a bunch of old memories of our little town.
The butcher knives wouldn't be Old Hickory, would they?

I think my stickn knife may be an Old Hickory, but mostly other brands. I have several Russell's, Queen, Village Blacksmith and other unmarked knives. And thanks!

Daaaaaaamn @Cornelius_Gotchberg what a spread. My season is just about over due to rain, so these last two were a little ahem, thin. Stretched a Garden Peach and one single Juliet into a sandwich and a half. Maruba Santoh for the green. Still delicious and the daughter didn’t complain either.

Recipe was supposed to be a replacement for King’s Sweet Rolls. It’s not exact but works pretty well. Not sure on the red/pink, garden is in such late stages I’m just throwing the few salvageable fruits in the basket, no sharpie labeling.
