Eta: Sorry, I know it’s the wrong time of year, but summer is just around the corner
After 7 days covered in salt my bacon is rinsed and hung for a couple of weeks to dry, come to equilibrium and to form a pellicle.
Apple Wood smoking begins soon thereafter.
After 40-50 hours of smoke during a 3 week period the bacon has started to take on a rich golden brown color that will only become richer with aging.
Just a couple of weeks ago after a 6 month age I pulled the bacon from the smokehouse and cut it into chunks, vacuum sealed it and into the freezer to wait on a proper mater to ripen.
Patience is finally starting to pay off with a nice cluster of Pink Stacy's beginning to do that wonderful thing.

I had 2 litter mates that were a cross of a Hampshire boar over a lard type heritage sow. Two back to back BLT's for supper last night. Yes I have slicers at long last!! Not the world's largest but fit perfectly on my skinny bread shape, and this year is a good one for primo tomato quality, thank goodness.
The Rodney is a brown, always sweet, plummy and meaty, now at F8.
The Kelly's Island Rumpus is an F4 - this particular tomato may be the best I've ever eaten. Tangy, fruity, sweet, and a little spicy note at the end of the bite. F3 parent wasn't nearly this good, so I hope I can stabilize it. The outdoor sibling is also loaded with fruit, and if it's half as good I will want every one of them!
Heated bacon this time and just perfectly warm and crispy, along with the toast.

@AKgardener when I figure out how to get seeds into the USA again, you should definitely try my home tomatoes. They don't mind the cold so much nor the ups and downs, and they're all sweet and relatively early.
Last year was so nasty with the heat we're not used to, I thought my home tomatoes were not going to be any good for the future. But I put them up against some disease resistant tomatoes this season and they're doing no worse, better if anything. So I think they are worthy, although the dream of 'easy tomatoes' that never need to be pampered might be just impossible.
Still worth it for a delicious BLT.
